There's nothing better than some yummy biscotti and a good cup of tea. Two of my favorite things! I made some honey apricot biscotti yesterday. The picture is not the greatest, but they sure taste good. A little bit of brown sugar and anise extract give the perfect spice! Any other biscotti recipes to pass along? I would love to try some other kinds.
{recipe}
3 egg whites
1/4 c + 2 Tbs honey
1/2 tsp anise extract
2 c flour
2/3 c brown sugar
3/4 tsp baking powder
1/4 tsp baking soda
dash salt
2/3 c finely chopped dried apricots
In a small bowl, whisk together the egg whites, honey and extract. In another bowl combine remaining ingredients, except apricots. Make a well in the center and pour in egg mixture and stir until moistened. Fold in apricots.
Spray a baking sheet with nonstick cooking spray; dust with flour. Divide the dough in half and form two 12"x2" rectangles on the baking sheet. Bake at 325 for 30 minutes, or until golden brown. Cool for 5 minutes.
Cut each diagonally with a serrated knife into 1/2" slices. Place cut side down on baking sheet. Bake for 7 minutes; turn over and bake 7 minutes longer or until golden brown. Store in an airtight container.

Wow! Biscotti! Now that's impressive. You have so much more talent than me! Hehe. I am a cooking dud. It is cool to know I have a "classy" friend who can make her own biscotti to go with her tea though! :D So...I haven't been doing much with the VSN this weekend. It's a bummer but, oh well. I just had a long list of other things I wanted to make so I had to push the VSN to the side for now. I did find out that my embrace card fits one of the vsn challenges though so maybe I will use it. Haha! By the way, I love your moose card! It is SO cute! I hope you are having a wonderful day! My hubby is finally home!
That does look yummy! I found your blog through Stephanie's. Good luck! I have been blogging almost a year. I am not an everyday blogger but I love to post. I am also a teacher - high school. I am from Colo. Springs and we were going to be moving back this summer but it looks like financially we have to wait another year. I'll stamp I guess to ward off the disappointment!
